- Use mason jars for canning.
- 1 gallon cucumber
- 8 large onions
- 2 chopped green bell peppers
- 1/2 cup salt
- 5 cups sugar
- 1 1/2 teaspoons turmeric powder
- 1/2 teaspoon ground cloves
- 3 tablespoons mustard seeds
- 1 teaspoon celery seed
- 5 cups vinegar
In a large container mix together the first 4 ingredients - let it stand for 3 hours - drain liquid. In a large pot, combine the sugar, vinegar and seasonings; bring to a boil. Add cucumber mixture; return to a boil. Remove from the heat. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Remove air bubbles, wipe rims and adjust lids. Process for 10 minutes in boiling-water.
