Standardize log pattern configuration across environments

Introduced a configurable `log.pattern` property to unify log formats across application configurations and Logback. Updated `application.properties` files and Logback configuration to use the new property for consistent logging. Added metadata for the new property to ensure proper documentation and integration with Spring tools.
